Chicken Tray Bake
This tray back is a dreamlover , it's like honey , it's like a sweet fantasy , it's got me feeling emotions , it's a vision of love .
Okay enough of the Mariah references ( hmmm I might have to do a vlog post in dedication to her).
You know I love tray bakes; less washing up , all the flavours intertwined , they are generally quicker. However , what I am not so much of a fan of are the potatoes. Thrown in as they are they are they never seem to get that crispy. Sure the flavours of the chicken marinade seep into the potatoes , and that's fantastic ; the texture of what I consider to be the ultimate potato is just not there . Here are present to you a traybake with the crispiest potatoes.
Unlike my previous posts, this is not going to be a recipe more of a technique.
Ingrediants
1 kg Bone in , skin on chicken thighs
500g potatoes
Chicken seasoning of your choice ( so far I have done harisa and tandoori )
Vegetables of your choice
1.Score and marinade chicken thighs, leave in fridge in a bowl or bag overnight to marinade
2. The next day. Peel and cut your potatoes into approx 3cm chunks , then soak in a bowl of cold water for at least 15 minutes ( released the starch)
3.Meanwhile preheat oven tray in oven and take marinaded chicken out of the fridge , so that it can come to room temperature ( helps keep the chicken moist )
4.Cut vegetables
5.After 15 minutes drain water from potatoes and place into saucepan or cold water.
6.Add salt and tumeric (optional , turns the potatoes yellow) and bring potatoes to a boil. Once at a boil allow to cook for 5 minutes exactly
7.Meanwhile in another sauce pan heat 1/4 cup of olive oil, along with any potato herbs or seasoning you world like on the potato. If using garlic crush it but do not peel it. Heat up until frangrant and turn down to a very low flame until you need it.
8.Drain potatoes , and coat with 2 tablespoons of semolina/ flour
9.Give potatoes a good shake so edges are roughed up
10.Place in baking preheated baking tray
11.Pour hot oil on top
12.Oven for 15 minutes and cook for 15 minutes at 200
13.After 15 , flip over potatoes and put in chicken pieces along with veg
14.Cook everything at least for 1 hour at 180 c
