The Taco Salad to end all salads (or at least I think so)- Serves 2
This salad is sooooo good. Who says salads has to include meat . The recipe came about from 2 directions the first being the wonderful 'trinityjae,' on YouTube, who I follow religiously, and from doing a fridge clearence. If you love tacos, like me, you'll love these.
I eat meat I know it's bad for the environment and I do feel sorry for the animals, so this is my compromise; finding intensely flavoured food and trying out as many vegan options as possible, so I can feel guilt free as much as possible. This is one of a few recipes I know where I do not miss the meat. I am on the look out for s good vegan yoghurt and cheese brand, so if you do recommend one please let me know.
Ingredients
Mince
500g Meatless Mince- either the meat free kind (the one from the meatless farm is my bae )
1 tbs cumin
1 tbs chillie powder
1tsb of smoked paprika
Salt and Pepper to taste
1 to 2 gloves garlic, crushed or 1 tsb of garlic powder
Salad
1/2 cup Corn- optional
2 cups Romaine Lettuce
10cm cucumber- chopped
1/2 cup Shredded Cheddar Cheese (vegan or diary )
Chopped Chillies (optional)
Red Pepper- Optional
Fried onions
1/2 cup of tomatoes- Optional
Dressing
Guacomili (Laura Vitale who does YouTube videos has what I believe an exceptionally great recipe)
Yoghurt vegan or dairy- optional
Method
1. Place salad vegitables and dressing in a large bowl ( so everything but the mince and spices) and mix until dressing coats all the veg. You want to do it lightly so as to not squash or bruise the veg
2. On a high heat, place mince in a wide frying pan
3. Add spices and garlic, mix in until mince is coated a frangrent.
4. Mix in with salad mixture you prepared earlier
